So there I am! Living it up in my 30-somethings with a ridiculously hot hubby, 3 seriously outgoing matter-of-fact smart beautiful kids, a cat named Roxii that just won't quit, 2 chihuahuas named Lokii (what was I thinking) and Brodii who don't understand the concept of pee outside.

I'm a strongly opinionated, outspoken, inappropriate and absolutely unapologetic chick going through this thing called life and trying to do it with my sanity intact. So far, this isn't working out so well!

Keto Day 3

Alright so I'm on Day 3, weighed myself this morning and total lost is 2.7lbs. I love water weight when it comes off, even though it's a sneaky deceptive way to measure your progress lol. It's a win win really.

Today my task was finding a way to make keto coffee taste better and stop me from wanting to barf. Why drink it? Well I work fulltime and only have a window of about 45 minutes in the morning to get up, get dressed, grab food and get to work. Get up earlier you say? Screw you! I love my sleep. If I could work any closer to home I would :)

So thanks to my bff Brenda, I sourced out the sugar free Torino syrups from personal service coffee. Of course I couldn't go in and just get 1, I had to get 3. I spent a total of 35 bucks AND those bad boys are going to last me forever.

Once I had those it was time to hit up bulk barn again for more almond flour because I also wanted to make 2 breakfast recipes so that if the coffee didn't work out I could at least have a solid go to.

Last stop was Metro because I also want to try this fat head pizza everyone is talking about. That's for dinner. Got the ingredients for my "keto-zza" and the kids got the un-keto version.

Anyhow I get home and right away I make the keto coffee, to sip through while I whip together these peanut butter chocolate chip muffins. The recipe yields 6 but since I didn't have large muffin inserts I just used regular ones and it yielded 10.

I was really reluctant to taste them because I'm used to white flour, regular milk and sugar but I have got to say...

...these were AMAZING!!!!!

You could smell the peanut butter in the house and I couldn't wait to try them but I didn't even get first bite. My son grabbed one because he said it smelled SO good. I didn't tell him what he was eating but I am so happy that he likes them. Then the other 2 dug in and left me with 4! I ate 2 as a serving and probably could've had the other 2 easily. They were absolutely fantastic and I'm happy my kids agree. I am not planning on forcing them onto this keto lifestyle bit if they gradually make a change over with me it is going to be exciting. My husband will be joining is shortly as well.

Anyhow I'm off to mess around with fat head pizza soon so I'll check back in either tomorrow or Saturday.
